A couple weeks ago I decided to try making this bread. I was hesitant to try it because it requires 5 eggs, which seemed excessive, but decided to give it a go.
I skipped the flax and added a little more almond flour to make up for it. I also baked it in a little larger of a pan than recommended, but it still turned out pretty good — much better than a similar bread I once tried. It’d be great with some jelly or jam on it and it’s a good snack early in the morning.
